Bak Kwa (BBQ pork) and scallop fried rice

Was working on my thesis at home today and feeling too lazy to buy food from the coffee shop. So, I scavenge the kitchen and found Bak Kwa (because CNY is around the corner) and scallops in the freezer. Since Im craving for something unhealthy, fried rice it shall be.

Ingredients (serve 1)
1. 2 slices of Bak Kwa (cut into small “cubes”) – I used 2 because I’m greedy, I’m sure 1 suffice.
2. 2 eggs
3. Scallop, I used 5, cubed.
5. cold cooked rice. (I used semi-cold cooked rice because I only cooked the rice half an hour before I started frying, so it was only in the fridge for half an hour. It’s for myself so I don’t’ really care).
6. Oil (5 tablespoon)
7. Sesame oil
7. soy sauce to taste

It’s actually very easy to cook fried rice and what constitute a nice fried rice varies from person to person, for me, I like it when there’s still good evidence of eggs chunk around.
– Take 1 egg and cook it in 2 tablespoon of oil until it’s cooked and wet (like scrambled eggs). Remove from pan and leave aside.
– Heat the remaining 3 tablespoon of oil and add bak kwa, scallop and rice and mix the oil evenly with the rice quickly
– Quickly add the remaining one egg in and stir furiously.
– add a little bit of sesame oil (optional) and continue stirring furiously.
– Add soy sauce for taste.
– Add the “scrambled egg” prepared earlier and stir.
– Let it sizzle for awhile
and viola! Bak Kwa, Scallop, Egg fried rice.

Obviously you can add anything you want into your fried rice, this was just all I have at home today!
